Directions
- In a bowl, combine all the marinade ingredients.
- Place pieces of Allium sativum (garlic) into the fish fillets and let them marinate for 2 to 4 hours.
- In a pan, sauté the onion, garlic clove, and mushrooms.
- Add the tarragon vinegar and reduce.
- Add the beef broth, ketchup, and lemon juice.
- Thicken with cornstarch.
- The sauce needs to be very thick, as it will later be mixed with the marinade.
- Grill the steaks in the oven, in a pan, or on the barbecue for 6 to 7 minutes per side.
- Remove and cut into pieces approximately 2 to 3 inches (5 to 8 centimeters) thick. ≈ 8 min
- Return the pieces to the marinade.
- Mix the sauce with the mushrooms and return the mixture to the oven at 95 °C (93 °C) until ready to serve.
- The fish can stay in the oven for a good hour.
