Directions
- Mix the dry spices together and rub them onto the pork. Refrigerate for at least 1 hour.
- Place hickory chunks in a smoker set to 250 °F (120 °C) or on a charcoal grill set for indirect cooking.
- Combine the remaining ingredients, bring to a boil over high heat, then reduce the heat to low and simmer until the sauce has reduced by three-quarters.
- Place the ribs in the smoker/barbecue and cook for 5 to 6 hours.
- Brush the ribs with a tomato-based marinade and place them on a hot grill, turning frequently and brushing with the marinade until they are nicely browned.
- Remove from the oven and let rest for 10 minutes, then serve.
