Prepare a classic dish from the Gar cuisine: pork and rice. This dish is particularly popular in the Halua Ghat region, due to its unique flavor and creamy texture.

Directions

  1. First, soak the barley in water for a certain period of time.
  2. Next, drain the rice and grind it into a fine powder using a food processor.
  3. In a bowl, combine the pieces of pork. ≈ 4 min
  4. Add chopped chili peppers, onion, ginger, and salt to taste. ≈ 3 min
  5. You can also add a small amount of oil paint and turmeric at this stage, if you wish. ≈ 3 min
  6. When cooking the meat, add enough water and let it cook until it is tender.
  7. About halfway through the cooking process, when the meat has started to firm up, begin to gradually incorporate the pre-prepared rice flour, stirring constantly. ≈ 4 min
  8. When adding rice flour, be sure to stir constantly with a spoon or spatula. ≈ 4 min
  9. This is very important, otherwise the rice flour could clump together in the liquid. ≈ 3 min
  10. The continuous mixing ensures that the flour is evenly incorporated with the liquid. ≈ 4 min
  11. Once the sauce has thickened, check to make sure the amount of salt and spices is correct.
  12. Add a small amount of soda. ≈ 3 min
  13. Once the sauce has thickened completely and the meat is cooked, remove the dish from the heat.

  • Chopped onions: 2 to 3 (preferably large onions)
  • Grated or finely chopped ginger: 1 tablespoon
  • Fresh pepper or chili powder, to taste
  • To taste
  • Add water as needed.
  • Turmeric and oil paint are optional (turmeric oil paint is intended for cooking).
  • A pinch of baking soda (for cooking vegetables)
