Bigos is a traditional Polish dish, hearty and flavorful, made with sauerkraut. It’s best to prepare it the day before.

Directions
- Drain the sauerkraut juice, pour it into a pot, add the broth, and bring to a simmer.
- Clean the mushrooms, remove the stem end, and slice them before adding them to the sauerkraut. ≈ 8 min
- Add the cumin and rosemary, and continue to cook over low heat.
- Please make sure to include the sausage, bacon, and onions, but without adding any extra fat. ≈ 3 min
- Add them to the sauerkraut and let it simmer for another 5 to 10 minutes.
- Pour in the red wine and remove from the heat. ≈ 3 min
- Place the sauerkraut in the refrigerator overnight. The next day, bring it to a boil again, uncovered.
- The bigos is ready when all the ingredients have been thoroughly incorporated and there is very little liquid remaining. ≈ 3 min
