Directions
- If you also want to prepare pizzoccheri pasta, mix the white flour and buckwheat flour, along with the salt and plenty of water, to obtain a smooth dough. ≈ 4 min
- Boil the spinach and chopped potatoes in a pot with plenty of water for about 5 minutes.
- Season the mixture and add the pizzoccheri pasta. ≈ 2 min
- Remove the garlic and sage from the butter. ≈ 3 min
- Continue to cook for about 10 minutes, then remove from the heat and drain.
- Combine the chopped vegetables and cheeses with the pasta, then pour the butter over the top. ≈ 4 min
- Served very hot, accompanied by a good wine from the Valtellina region. ≈ 2 min
