Directions

  1. The day before, mix the poolish ingredients in the correct order and let it rest in the refrigerator in a sealed container overnight.
  2. Whisk the poolish in 350 ml of water. Add half of the flour, then the remaining flour mixed with the salt, and mix with a wooden spoon. ≈ 4 min
  3. Turn the dough out onto a clean work surface. Roll the edges inward, folding them towards the center and pressing; repeat until no flour remains. Cover with the bowl, turned upside down, for 15 minutes.
  4. Grease your hands, lift the dough from the center, let it fold over itself, and rest it; repeat several times.
  5. Let it rest for 30 minutes in the bowl.
  6. With oiled hands, divide the dough into 5 portions and shape them into rounds. Coat the bottoms of each with semolina, place them on a baking sheet, oil the tops, and cover with plastic wrap.
  7. After about 2 hours of rising, the dough is ready to be rolled out.
