Directions

  1. Prepare two balls of dough in separate bowls to make the process easier. ≈ 10 min
  2. Make one at a time. ≈ 3 min
  3. Heat the water to 37 degrees Celsius.
  4. In a bowl, mix the yeast with a small amount of water. ≈ 4 min
  5. Add the remaining water, oil paint, salt, and basil. ≈ 3 min
  6. Gradually add the flour, keeping some of the dinkel flour aside for cooking. ≈ 4 min
  7. Knead the dough on a lightly floured work surface. ≈ 10 min
  8. Let it rest for 30 minutes.
  9. Next, move on to the next one. ≈ 3 min
  10. While the dough is rising, preheat the oven to 175 degrees and begin preparing the filling.
  11. Dice the onion and sauté it in oil with the sambal and a generous amount of garam masala until it softens. ≈ 8 min
  12. Add the tomato puree, soy protein, and soy sauce. ≈ 3 min
  13. Let it simmer for ten minutes.
  14. While you’re doing that, chop the broccoli and slice the mushrooms (and the banana). ≈ 8 min
  15. The curry sauce is quick to prepare: simply heat a large amount of curry powder in a pot, then add the cream, stir, heat through, and season to taste.
  16. Grease the dish. ≈ 3 min
  17. Knead and spread out the first dough, then add the soy mixture, filling, and finally the sauce. ≈ 10 min

  19. It’s important that the sauce covers the cashews, otherwise they will burn. ≈ 3 min
  20. Bake in the center of the oven for approximately 20 minutes.
