Muffins, originating in the United States, have become popular in Europe. A fruity variation, reminiscent of holidays and the Caribbean, is the pineapple and coconut muffin. These muffins will delight both children and adults.

Directions

  1. In a bowl, sift the flour with the baking powder and gently mix it with the shredded coconut. ≈ 4 min
  2. Cut the pineapple into small pieces. ≈ 8 min
  3. egg, caramelize, oil paint, yogurt and rum (or apple juice), well mixed.
  4. Add the pineapple pieces and gently mix. ≈ 4 min
  5. Finally, incorporate the flour mixture. ≈ 4 min
  6. Pour préparer the muffins, grease the muffin tin or paper molds, then bake in a preheated oven with circulating air at medium temperature (approximately 180 °C) for 20 to 25 minutes, or until golden brown.
  7. The muffins should rest in the pan for 5 minutes, then be removed and allowed to cool.
