This is a traditional Charentais recipe: éclade is a dish of mold cooked over a pine needle fire, served with white wine and bread spread with butter.

Directions
- Moisten the board to prevent it from burning, and place it directly on the ground in a safe location. ≈ 3 min
- Arrange the molds in a spiral, with the opening facing downwards, and in a snail shape, with the points facing upwards. Use aluminum foil or one or two large points to support the first molds, preventing them from becoming filled with ash. ≈ 3 min
- Cover the molds with a thick layer of dry pine needles (brown in color). Be sure to use at least 30 cm of needles to ensure even cooking. ≈ 3 min
- Light the needles against the wind. The fire slowly spreads across the dry, “singing” wood. ≈ 3 min
- Once all the ashes have cooled down, after about 5 to 7 minutes, gently break up the molds using a metal tool. The molds will be cooked through.
- Take the mold and place it on a table. Open the molds with a knife and enjoy them with dry white wine and slices of bread spread with salted butter. ≈ 3 min
