The Basque sauce, made with choricero peppers, confit red onions, tomatoes, and toasted bread, envelops long-cooked snails in a flavorful broth. The snails are first purged for fifteen days, then cooked in two stages before being mixed with bacon and the sauce.

Directions

  1. Keep the snails in a mesh bag for 15 days to allow them to purge. ≈ 3 min
  2. After this time, remove the dry membrane from the opening with a pin, then cover each snail with salt. ≈ 3 min
  3. Let them sit for a few minutes to allow any impurities to settle. ≈ 3 min
  4. Wash them thoroughly under running water. ≈ 2 min
  5. Submerge them in a vegetable stock heated to 50 °C and bring to a boil for 20 minutes.
  6. Stir frequently during cooking. ≈ 3 min
  7. Cook them for another 40 minutes in a separate pot with broth.
  8. Strain the broth and set it aside.
  9. The day before, remove the stems and seeds from the hot peppers, then either soak them in warm water or cook them for 5 minutes.
  10. Remove the flesh with a sharp knife, chop it up, and set it aside. ≈ 8 min
  11. In a large pot, combine the oil paint, garlic, and dried chili pepper over low heat.
  12. Once the garlic starts to turn golden, remove the chili pepper and add the onions. ≈ 3 min
  13. Please, preserve gently. ≈ 3 min
  14. Add the chopped choricero peppers, tomatoes, and toasted bread, along with the broth.
  15. Let it simmer for 30 minutes over low heat.
  16. Blend in a blender, then pass through a Chinese sieve. ≈ 4 min
  17. Place the bacon dice in a pot with a small amount of oil paint.
  18. Add the snails and the béarnaise sauce. ≈ 3 min
  19. Cook over low heat until the snails are well coated and saturated with the sauce.

  • 1 kg of edible snails with intact, hard shells
  • salt
  • 150 ml of extra virgin olive oil
  • 2 cloves of garlic, sliced
  • 1 dried chili pepper
  • 2 red onions, finely chopped
  • 200 ml of thick tomato sauce
  • 2 slices of toasted bread
  • 1 cup of chicken broth
  • 400 g of pork, diced
