Directions
- Slice the eggplants into approximately one-centimetre-thick pieces (or into cubes, as is done in some regions of Sicily), and let them drain by sprinkling them with salt. ≈ 8 min
- Next, I brushed both sides with extra virgin olive oil, and then placed them on paper towels to absorb any excess oil. ≈ 3 min
- Dice the tomatoes and onions and sauté them in a pan with the finely chopped onion, until they are softened and the remaining oil has coated them.
- Cook the pasta separately and then mix it with the tomato sauce.
- Serve in plates, with diced zucchini and basil, and top with grated, salted ricotta cheese. ≈ 2 min
