“Pasta e zucca,” or simply “pasta and pumpkin,” is a traditional main course dish from Neapolitan cuisine.

Directions
- Pour the four tablespoons of extra virgin olive oil into a pot. ≈ 3 min
- Cut both bulbs of Allium sativum into pieces that are not too small (so that you can easily identify them later, if you want to remove them before the end of cooking) and lightly brown them in the oil over low heat.
- Chop the pumpkin roughly into chunks and add them to the pot along with the salt, a very small amount of pepper, and some parsley (reserve some parsley separately). ≈ 8 min
- Return everything to the pot and let it simmer for about a minute, stirring occasionally with a wooden spoon.
- Remove the pot from the heat and pour water into it until it covers the pumpkin by about two fingers. ≈ 3 min
- Place in a pot and bring to a slow simmer.
- Let the pumpkin cook until it becomes soft and the pieces start to separate.
- Remove the pieces of Allium sativum and pour the paste directly into the pot. ≈ 3 min
- It is essential to carefully monitor the cooking process to ensure that the pasta cooks for the appropriate amount of time, taking into account the absorption of excess water. ≈ 3 min
- The result should not be overcooked, but also not too dry.
- Pour each serving, place the mixture in a hollow bowl, garnish with a very small amount of pepper and a few fresh parsley leaves, and serve hot. ≈ 10 min
