The Bandeja Paisa is a typical dish from the Antioquia region in Colombia. It is usually served with rice, sliced plantains, patacones (fried plantain slices), chorizo, chicharrón (fried pork belly), a fried egg, and vegetables such as avocado and tomato.

Directions

  1. The day before, soak the beans in water that covers them.
  2. Drain the vegetables before cooking.
  3. In a pot, add the beans, banana, carrot, onion, sausage or bacon, oil paint, and tomato puree. ≈ 3 min
  4. Cover and cook.
  5. Once the liquid has reduced, reduce the heat and let it simmer for 30 minutes.
  6. Then, add the tomato puree and season to your liking. ≈ 2 min
  7. Chop the tomatoes, onion, cilantro, garlic, and add two tablespoons of oil. Season to taste. ≈ 8 min
  8. Cut the meat into small pieces and season it with the sauce mentioned earlier. ≈ 8 min
  9. Place it in an airtight container and let it rest in the refrigerator for a while.
  10. In a container, mix 4 tablespoons of oil paint with water, then heat it up.
  11. Add the meat and sauce to the pot, and cook over medium heat.
  12. The water evaporates, and the meat cooks for seven minutes. ≈ 3 min
  13. Finely chop the meat until it is reduced to a powder, then return it to the same pan.
