Directions
- Soak the rice noodles in warm water for 15 minutes.
- Cut the chicken into thin slices. ≈ 8 min
- Dice the onion. ≈ 8 min
- Finely chop the chives and set them aside. ≈ 8 min
- In a large pan or wok, heat 3 tablespoons of oil and sauté the finely chopped garlic until golden brown.
- Add the chicken and onion, and cook for 1 minute.
- Then add 1 large tablespoon of tomato paste, 1 tablespoon of soy sauce, 1 tablespoon of fish sauce, 1 tablespoon of sugar, and the juice of half a lemon (or the equivalent in tamarind juice). ≈ 3 min
- Then, add the pasta and mix thoroughly until well combined. ≈ 4 min
- Cook for 3 minutes, adding water and oil paint as needed.
- Create a well in the center of the preparation and crack 2 eggs into it. ≈ 3 min
- Cover with the pasta and let it cook for 30 seconds.
- Then, thoroughly combine all the ingredients. ≈ 4 min
- Add 100g of fresh soybeans and chopped chives, and cook for 1-2 minutes, then turn off the heat.
- Arrange in a dish or on a plate. ≈ 2 min
- Add pepper. ≈ 2 min
- Top with chopped cilantro, crushed peanuts, and a pinch of chili powder. ≈ 3 min
- Garnish with the remaining fresh soy sauce, a few fresh chive sprigs, and a slice of lemon (to squeeze over the pasta before eating). ≈ 10 min
