Jam and preserves are not the same thing: jam is made from citrus fruits. Here is an orange jam with pulp and zest, cooked briefly with a gelling agent.

Directions

  1. Wash and dry the oranges. Grate about 25g of zest from the 3 untreated oranges. ≈ 8 min
  2. Peel the oranges thoroughly, removing the white peel and cutting them into segments. ≈ 8 min
  3. Mix 900g of meat with the zest, and pour into a pot with the gelling sugar.
  4. Bring to a boil and let it simmer for about 1 minute, stirring constantly.
  5. Immediately pour into sterilized jars, close them tightly, and turn them upside down for a few minutes. ≈ 3 min
