Directions
- Chop the onions and sauté them in butter melted in a pan, preferably a cast-iron pan, or at the very least, an enamel or steel pan.
- By ensuring they are not overcooked, simply softening them slightly is enough.
- Next, add a tablespoon of flour and mix well, keeping the heat very low.
- Add salt and pepper, preferably white, as well as one litre of water; bring to a boil.
- Let it simmer for two minutes, then remove from the heat and serve.
- Add the desired amount of Parmesan cheese to the soup, or sprinkle it directly onto the plate. ≈ 3 min
- In France, Gruyère cheese is typically used, but another type of mountain cheese from the same family – such as Conté du Jura or Savoie, or Valdostana fontina – also works very well, especially if you want to prepare the recipe in a more complete and refined way, by baking it. ≈ 3 min
- Toasted bread is essential and should be added to the mixture just before use.
