Directions
- Cut the meat into pieces and place it in a large pan.
- Add celery, carrots, onion, salt, a little pepper, water, and 1/2 cup of white wine. ≈ 3 min
- Once the meat is cooked, put everything in a food processor. ≈ 3 min
- Pour the mixture into a bowl and add Parmesan cheese, eggs, chopped walnuts, nutmeg, butter, a pinch of salt, and lemon zest. Mix well by hand. ≈ 4 min
- While doing this, remove the pits from the olives, preferably by separating them into spirals with a sharp knife, and then folding them around the mixture. ≈ 3 min
- Coat the olives with flour, then with an egg, and finally with breadcrumbs, and fry them in virgin olive oil or vegetable oil.
