Mulberry and cornflower-flavored drink
A traditional Cornish drink made with mulberries macerated in vinegar, then cooked with cloves, ginger, and sugar, which can be stored for months.
This traditional drink originates from Cornwall, in the southwest of England. The mulberries are soaked in vinegar for a day before being cooked with spices.

Directions
- Wash the mulberries, drain them in a sieve, then mix them with the vinegar in a large salad bowl. ≈ 4 min
- Cover the salad bowl with cling film, ensuring it’s not tightly sealed, and let it marinate for 24 hours.
- The following day, measure the volume of liquid and, for every 500 ml of elderberry juice, add 6 cloves of allspice, 1 cm of ginger, and 350 g of sugar. ≈ 3 min
- Pour all, add all the ingredients to a pot and bring to a boil.
- Cook for 30 minutes, then strain the mixture through a double layer of cheesecloth.
- Pourage in a sterilized bottle and seal it tightly. ≈ 3 min
- As long as the acidity remains sufficient, the beverage can be stored for several months. ≈ 3 min
- Once opened, keep the beverage refrigerated.
