Homemade quince compote
A quince compote flavored with lemon, served cold after a meal or on hot days to quench thirst, and ready in about 30 minutes.
In Azerbaijan, quince compote is typically consumed after meals, during celebrations, or on hot days to quench thirst. The fruits, cooked in a light lemon syrup, retain their aroma. With delicate varieties, the compote remains clear, and the whole fruits are preserved.

Directions
- Remove the core and seeds from the quince. ≈ 3 min
- Cut them into slices. ≈ 8 min
- Submerge them in cold water mixed with a small amount of citric acid. ≈ 3 min
- Take a break.
- Add the powdered sugar and a little hot water to the juice. ≈ 3 min
- Mix. ≈ 4 min
- Simmer for 20 to 30 minutes over low heat, until the fruit is tender.
- Optionally, add lemon zest and juice to the compote.
- Using delicate varieties, immerse the fruits in the boiling water.
- Remove them from the heat immediately. ≈ 3 min
- Let it cool with the lid on: the juice remains clear, and the fruit stays whole.
