A generous Lombard-style risotto with crumbled luganega sausage, onion, and red wine, cooked in meat broth until the rice is perfectly creamy.
Risotto alla Milanese is a Lombard specialty. The soft, crumbled sausage and the red wine give it a round and comforting flavor.

Directions
- Chop the onion and sauté it in a pan with the butter. ≈ 8 min
- When it’s golden brown, add the sausage and use a fork to break it up. ≈ 4 min
- Once the sausage is browned, add the rice and let it toast for a few minutes. ≈ 3 min
- Pour the wine and let it evaporate. ≈ 3 min
- Add just enough broth to cover the rice, then replenish it as it evaporates, until the end of the cooking time.
