Swedish elk rolls (älgrullar)
Rolled pheasant, stuffed with parsley butter, pan-fried until golden brown, and then simmered until tender, served with a creamy sauce.
These Swedish rolls highlight the importance of ground meat: thin slices of meat are filled with a mixture of butter and herbs, then pan-fried and simmered. The sauce, which is short and flavorful, is made using the cooking juices.
