Ground meat meatballs with a breadcrumb coating
Soft, ground meat meatballs, soaked in milk, with onions, garlic, and parsley, seasoned with mustard and paprika, and pan-fried to a golden brown.
These ground meat patties are a beginner-friendly recipe: stale bread soaked in milk, ground meat, an egg, onion, garlic, and parsley. They are about the size of a ping-pong ball and turn golden brown in a frying pan in about ten minutes.

Directions
- Soak the small bread in warm milk.
- Squeeze the bread well to extract the milk. ≈ 3 min
- In a large bowl, combine the breadcrumbs, eggs, and ground meat. ≈ 3 min
- In a pan, sauté the chopped onion and garlic in the butter over low heat.
- Add the freshly chopped parsley, prepared in a food processor, and cook until it softens.
- Pour the everything into the salad bowl with the ground meat, and season generously with mustard, a few drops of Worcestershire sauce, salt, pepper, paprika, and red chili flakes. ≈ 2 min
- Thoroughly knead the mixture with your hands. ≈ 10 min
- Make meatballs about the size of a ping-pong ball. ≈ 10 min
- Fry the meatballs in hot oil or clarified butter for 5 to 8 minutes.
- Turn the meatballs frequently until they are golden brown on both sides. ≈ 3 min
