Directions
- Cook the apples until they are tender.
- They can be steamed for approximately 20 to 30 minutes, or cooked in salted water, peeled or unpeeled.
- Steaming or cooking in water helps to preserve most of the flavors.
- If necessary, peel the apples, place them back in the pot, and mash them with a fork over a hot, but turned-off, griddle. ≈ 3 min
- Alternatively, use a potato masher. ≈ 3 min
- Blenders are not suitable, as they destroy the starch crystals in the apples, resulting in a sticky consistency for the puree! ≈ 3 min
- Gradually add the butter, incorporating it little by little with a potato masher or whisk, then add the warm milk. ≈ 3 min
- The higher the proportion of butter, the less milk is needed. ≈ 3 min
- The amount of milk also varies depending on the type of potato and the desired consistency. ≈ 3 min
- Season to taste with salt, freshly ground black pepper, and chopped walnuts with nutmeg. ≈ 2 min
- To achieve a very smooth puree, strain it again. ≈ 2 min
