Mapo Doufu is a typical dish from Sichuan Chinese cuisine, known for its spicy flavor and creamy texture. It consists of a mixture of tofu and ground meat, cooked in a spicy sauce and seasoned with various ingredients.

Directions

  1. Cut the tofu into small pieces; for example, a block of silken tofu can usually be divided once vertically, once horizontally, and three times lengthwise (when placed on its widest side). ≈ 8 min
  2. Then, allow the water to drain and set the tofu aside. ≈ 2 min
  3. You may sometimes need to pour some of the newly drained water from the tofu. ≈ 3 min
  4. Heat a wok and pour in the cooking oil and the chili oil.
  5. Once the oil has started to smoke, add the chopped garlic, ground meat, and red kidney beans, and cook quickly until the ground meat is half-cooked. ≈ 3 min
  6. (It is advisable to wear protective gloves or wrap your wrist with a handkerchief, as red kidney beans can sometimes cause burns). ≈ 3 min
  7. Next, add the chili powder, soy sauce, and mashed black beans, and cook until the mixture starts to emit a strong aroma.
  8. When the sauce has a pleasant aroma, gently pour in the tofu and water; make sure not to break the tofu pieces. ≈ 3 min
  9. For example, place the plate containing the tofu near the surface of the sauce and use a spatula to gently place the pieces into the sauce. ≈ 3 min
  10. Then, gently mix everything together. ≈ 4 min
  11. So, finally, it’s time to add the Sichuan peppercorn powder and the chopped green onions. ≈ 3 min
  12. Gently mix until the powder and onions are thoroughly combined with the other ingredients. ≈ 4 min
  13. The dish is now ready to be served. ≈ 2 min
