Maghrebi couscous
Steamed durum wheat semolina, served with lamb and slow-cooked vegetables (carrots, turnips, zucchini, chickpeas) seasoned with ras el hanout.
Couscous is the signature dish of the Maghreb: a light semolina cooked by steaming, served with a lamb and vegetable stew seasoned with ras el hanout.

Directions
- At the bottom of the pot, brown the lamb and finely chopped onions in the olive oil. Add the tomato paste, ras el hanout, salt, and cover generously with water. Bring to a boil.
- Place the semolina in the upper part of the couscoussier and place it on the bottom. Seal the entire assembly with a damp cloth tied around the joint. ≈ 3 min
- Cook for 30 minutes from the moment the steam passes through the semolina.
- Remove the semolina, spread it out in a large dish, drizzle with oil paint and a little water, and then use your fingers to work it in. ≈ 4 min
- Taste the broth and adjust the seasoning as needed.
- Add the carrots, turnips, parsnips, zucchini, chickpeas, parsley, and cilantro to the broth.
- Return the semolina to the top of the pot and continue cooking for 40 minutes.
- Serve the semolina with the meat and vegetables, and the broth separately.
