Macaroni salad with mortadella
An Iranian pasta salad with corn, green peas, pickles, and mortadella, tossed in a yogurt and mayonnaise dressing. Serve very cold.
This Iranian-inspired macaroni salad combines vegetables, mortadella, and a creamy yogurt and mayonnaise-based sauce. Allowing it to chill for a while allows the flavors to meld together.

Directions
- Bring a pot of water to a boil, adding two tablespoons of salt.
- Add the macaroni and cook for about 10 minutes, then drain them.
- In a large salad bowl, combine the mayonnaise, yogurt, and a pinch of pepper. ≈ 4 min
- Add the pickles, corn, green peas, and mortadella, then mix well. ≈ 4 min
- Add the drained macaroni and mix well to coat them evenly. ≈ 4 min
- Let the salad rest in the refrigerator for 2 to 3 hours before serving.
