Directions
- Peel the apples and cut them into quarters. Peel the onion and finely chop it. ≈ 8 min
- Melt the butter in a pan and sauté the onion for about 4 minutes, until it becomes translucent.
- Wash and dry the nettle leaves, then add them to the butter. Cook over medium heat for about 3 minutes, until they soften.
- Add the potatoes and beef broth. Bring to a boil, then reduce heat to a simmer and cook for 30 minutes, or until the potatoes are tender.
- Remove from the heat and allow to cool, then blend in a food processor or immersion blender until smooth.
- Put the soup back in the pot and heat it up.
- Remove from the heat again and stir in the sour cream to thicken the soup.
