- Pour this, pour a generous amount of olive oil in a large frying pan. Once it’s hot, add the chopped onions and peppers. ≈ 3 min
- Add the fresh sausage (or, even better, salami pezzente), a little water, a splash of red wine, and the fresh tomatoes. Let it cook over low heat until all the liquid has evaporated.
- Crack the egg without separating the yolk and white, and mix immediately, so that it transforms into a kind of cooked stracciatella. ≈ 4 min
- Serve with grilled bread, especially when it’s a complete meal.
