Directions
- Cook the field apples, unpeeled, in salted water. Cook the beans separately in salted water, but do not overcook them; they should remain firm.
- Drain the beans and place them in a large salad bowl that has been rubbed with garlic. Add the peeled and diced or sliced apples, or mash some of them for a smoother texture. ≈ 4 min
- Dice the bacon and brown it, then add it to the mixture.
- Garnish with chopped parsley and finely minced onion. ≈ 2 min
- Option 1: Thicken the sauce with 2 tablespoons of cornstarch.
- Variant 2: Sauté the onions in the bacon fat before adding them to the mixture. ≈ 3 min
- Deglaze the frying pan with vinegar, let it reduce for 2-3 minutes, pour the hot vinegar into the salad bowl, season with salt and pepper, and mix the ingredients thoroughly.
