Here’s an unusual way to cook lettuce: blanch it in boiling water, then coat it in a creamy, ham-based sauce. The lemon adds a refreshing touch. Serve hot, as a main course or as a side dish.

Directions
- Sort and wash the lettuce, then soak them in a pot of salted water for about 10 minutes. Drain the lettuce, reserving the cooking water, and keep the lettuce warm.
- Melt the butter in a pan, add the flour, then pour in a little of the water used to cook the lettuce. Stir until you have a clear sauce. Season with lemon juice and salt.
- Finely chop the ham and add it to the sauce. Finish with the whipped cream. ≈ 8 min
- Arrange the lettuce on a plate and drizzle with sauce, leaving the green ends exposed. Serve the remaining sauce separately. ≈ 2 min
