Ash shileh lentil soup is a classic Iranian recipe, originating in Tehran, and is well-known in the Eastern Azerbaijan region.

Directions
- Soak the lentils, rice, and crushed wheat for about two hours.
- Next, we add the onions, along with a little turmeric, then we add the chicken broth and water, and pour the lentils into the pot so that they can cook halfway through.
- Once the lentils have been cooked halfway, we add the rice and crushed wheat. ≈ 3 min
- The rice needs to be cooked slowly, with small flames appearing, until it is tender.
- Next, we add the vegetables and tomato puree so that they can cook together and absorb the flavors. ≈ 3 min
- Note 1: Alternatively, you can also use 4 whole chickens instead of the chicken broth.
- In this case, you would boil the 4 chickens in 6 litres of water, but you would not add any more water.
- Note 2: We can also add a spoonful of tomato puree for a more vibrant color. ≈ 3 min
- Note 3: Since semolina cooks quickly, it is best to stir the soup constantly while it is simmering. ≈ 4 min
- Note 4: If the stew becomes too thick, we can add a glass of water. ≈ 3 min
