Lentil soup is a traditional dish from the Eastern Azerbaijan region, known as “ash gooshvare.” It’s perfect for a warm and comforting meal.

Directions
- Mix the meat with grated onion, salt, and pepper, then gently knead. ≈ 4 min

- Make small meatballs, about the size of a hazelnut.

- Divide the dough into four equal portions. ≈ 3 min
- Use a rolling pin to roll it out until it reaches a diameter of 2 millimeters. ≈ 4 min
- Using a knife, cut out 2 x 2 centimetre squares. ≈ 8 min
- Place a small amount of meat (about the size of a pea) on each square. ≈ 3 min
- Next, seal each square individually. ≈ 3 min
- First, sauté the onion, tomatoes, cream, and dried mint in a pan. Then, add water until it boils.
- Next, we add the pasta, mix everything together, and then add the cooked chickpeas. ≈ 3 min
- After a few minutes, we add vinegar and let it simmer for about 30 minutes.
- Finally, we serve the dish and garnish it with cilantro. ≈ 2 min
