Lentil soup, also known as “sholeh palteh,” is a traditional Iranian dish, particularly popular in the Hamadan province. This soup is both delicious and filling, making it perfect for cold days.

Directions
- Cook the meat with onions, bell peppers, turmeric, and fried onions in water.
- Add the rinsed bulgur and lentils to the soup, and let it simmer at a very low temperature, as the bulgur cooks very quickly.
- Also, add a tablespoon of animal fat or butter to the bulgur while it’s cooking, to ensure it cooks through properly. ≈ 3 min
- In the final moments, we add salt, chopped herbs, and diced apples, and mix everything together. ≈ 3 min
- Once the soup has reached the desired consistency, we add a tablespoon of butter and the soup is ready. ≈ 3 min
- If you wish, you can add a sauce or some pita bread to the soup. ≈ 3 min
