Directions
- Thoroughly clean the onions, removing the outer leaves, and then cut them in half lengthwise and blanch them in plenty of salted water for 2 or 3 minutes.
- Next, place the towels on a clean dishcloth to dry. ≈ 3 min
- Once they have cooled, carefully remove the entire leaves.
- In a bowl, combine the ricotta, pecorino, and whole egg. ≈ 4 min
- Season with salt and pepper, and flavour with chopped walnuts, nutmeg, and thyme. ≈ 2 min
- Place the leek leaves on the work surface so they are evenly spread, cover with slices of bacon, pour in a spoonful of the mixture, and gently roll them up, using a cocktail straw to keep them together. ≈ 3 min
- Arrange the rolls in a lightly oiled dish, brush them with two tablespoons of oil paint, and then bake in a preheated oven at 180 degrees for ten minutes.
- Serve at room temperature. ≈ 2 min
