Slow-cooked lamb shanks
Golden lamb shanks braised with onions and carrots, simmered in a tomato and garlic sauce, flambéed with brandy, and finished with a touch of golden flour.
Among the local dishes from Ayerbe, in Aragon, this slow-cooked lamb shank is simple yet delicious: onions and carrots, golden-brown lamb shanks, grated tomato, garlic, and brandy flambé, all bound together at the end of cooking with a little bit of golden flour.
