Directions
- Prepare the dough according to a standard recipe and refrigerate it.
- Cut all the meat into small cubes. ≈ 8 min
- Dice the apples. ≈ 8 min
- Finely chop the onions. ≈ 8 min
- Slice the bacon or pancetta thinly. ≈ 8 min
- Combine all the ingredients, except the dough and the broths, in a large mixing bowl.
- Spread two-thirds of the dough evenly over the bottom and sides of a large cast iron Dutch oven. ≈ 4 min
- If you miss the first time, start again, in two parts: the procedure is delicate, and the base of the pastry must be airtight. ≈ 3 min
- Preheat the oven to 125 °C.
- Pour evenly distribute the filling, pour it in up to 4 cm from the edge. ≈ 3 min
- Add the chicken broth and beef broth.
- Cover with the remaining dough, making sure there are no holes, otherwise the broth will evaporate during cooking. Patch any holes with a little milk if necessary.
- Cook for 8 hours.
- Remove the lid and place in the oven for 45 minutes, or until the dough is golden brown and crispy.
