Directions
- Wash the chickpeas (allowing 100 grams per person). ≈ 2 min

- Soak the potatoes in water overnight (along with a packet of baking powder or baking soda).

- Remove any excess water, and add the juice of one lemon to prevent the chickpeas from turning brown. ≈ 3 min

- Cook the chickpeas until they are soft, like for making a puree.

- Never add pickling ingredients while cooking the chickpeas (as they will become hard). ≈ 3 min

- Water the bread, cut into small pieces, until the water is absorbed. ≈ 3 min

- Salt and season with olive oil, cumin, and harissa. ≈ 2 min

- You can also garnish with capers, olives, tuna, or a soft-boiled egg. ≈ 10 min
