Kidney beans with beef ribs
Slow-cooked kidney beans with beef ribs in a rich sauce made with pumpkin seeds, sesame seeds, and chili peppers, similar to a traditional Guatemalan dish.

Directions
- The day before, sort the beans, place them in a non-metallic container, and cover them with water, adding an extra litre of water. Cover with a clean cloth. ≈ 3 min
- On the same day, discard the soaking water and rinse the beans twice. ≈ 2 min
- Cut the beef bones into pieces. ≈ 8 min
- Place the beans, meat, the whole, peeled head of Allium sativum (garlic), and half of the onion in a pressure cooker. Cover with water and cook for 35 minutes from the time the cooker starts hissing. Do not add salt.
- While that’s happening, grill the chili peppers, tomatoes, the remaining half of the onion, pumpkin seeds, and sesame seeds. Set aside in a blender.
- Once the beans are cooked, remove and discard the onion and garlic. Add a small amount of the cooking liquid to the blender. ≈ 3 min
- Mix until you achieve a smooth liquid. ≈ 4 min
- Pour this sauce over the beans. Mix well and add water if needed – the dish should remain quite saucy. Season to taste. ≈ 4 min
- Bring to a boil over medium heat.
- Serve in a hollow dish, with rice as a side dish. ≈ 2 min
- Add hot peppers to your liking. ≈ 3 min
- Serve with tortillas. ≈ 3 min
