- In a bowl, combine the grated onion and garlic, finely chopped vegetables, crushed walnuts, pepper, and pomegranate puree. ≈ 4 min
- Next, add the meat, cut into pieces of uniform size. ≈ 3 min
- (Add salt during cooking to prevent the kabaab from becoming too hard). ≈ 3 min
- Cover the dish and place it in the refrigerator for 2 to 3 hours to allow the flavors of the ingredients to penetrate the meat.
- Next, thread the meat onto skewers, spacing them about one centimetre apart (the space between the pieces of meat will ensure even cooking). ≈ 3 min
- Place the skewers on a barbecue or directly over the fire.
- Once the skewers start to cook, season them with salt to keep them tender (this is the best method for cooking skewers, especially marinated and charcoal-grilled skewers).
