Directions
- Wash, peel, and coarsely grate the Jerusalem artichokes and carrots. Finely chop the cabbage and place everything in a large salad bowl. ≈ 8 min
- Add the finely chopped parsley, then season to taste with olive oil, vinegar, and salt. ≈ 2 min
- Mix well and allow to rest in the refrigerator for a while before serving.
