Directions
- Cook the pasta according to the instructions on the package.
- Peel and chop the onion into thin slices. ≈ 8 min
- Peel the garlic and chop it into thin slices. ≈ 8 min
- Peel the pepper and cut it into thin slices. ≈ 8 min
- Sauté the onion, garlic, and bell pepper in olive oil in a pan until they are tender but not browned.
- Finely chop the walnuts. ≈ 8 min
- Add the walnuts, wine, and beef broth, and simmer over low heat for 5 minutes, covered.
- Finely chop the pancetta, add it to the vegetables, and simmer covered for 5 minutes.
- Add the cream and black pepper, and mix well. ≈ 4 min
- Next, add the potato starch that has been dissolved in a small amount of water, while mixing. ≈ 3 min
- Chop or finely mince the parsley. ≈ 8 min
- Add about 2/3 of the parsley to the sauce and taste to adjust the seasoning with salt if needed. ≈ 2 min
- Then, pour the sauce over the pasta and mix well. ≈ 4 min
