These Khouzestan falafel are made with twice-ground chickpeas for a crispy texture. Sesame and chili peppers add a spicy kick.

Directions

  1. First, coarsely chop the soaked chickpeas. Then, chop them again with the onion, garlic, green chili pepper, and salt: two passes are essential. If desired, add sesame seeds, yeast, and possibly red chili pepper, mix well, and let the mixture rest for half an hour.
  2. For crispy falafel, add the water gradually at this stage. Shape by hand or using a falafel mold. ≈ 3 min
  3. Heat the oil. As soon as the falafel balls change color, flip them quickly to prevent them from burning; the oil must remain hot throughout the cooking process. Then, drain them on paper towels.
