Directions

  1. Chop the onion, carrots, and celery into small pieces. ≈ 8 min
  2. First, sauté the onion in a pan with a little extra virgin olive oil until it becomes translucent.
  3. Add the horse meat and sear it on all sides.
  4. Add the tomato sauce, carrots, celery, parsley, bay leaves, chili pepper, and black peppercorns. ≈ 4 min
  5. Add 100 ml of water to completely cover the meat. ≈ 3 min
  6. Let it simmer over low heat for at least 2 hours in an earthenware pot near the fire.
  7. Serve the small portions of horse meat hot, accompanied by slices of toasted bread.

  • 50 g of carrots
  • 50 g of chives
  • One sprig of parsley

  • A pinch of black peppercorns
  • 100 ml of water
