A recipe for marinated lamb, served with golden-brown slices coated in hoisin sauce.
Lamb - “Like Honey” - The Chinese Empress Cixi enjoyed a lavish lifestyle. More than a hundred dishes were prepared for her at each meal, and served by eunuchs at multiple tables. One dish in particular was so much to her liking that she asked the chef to tell her its name. “Like Honey,” she said, and from then on, it was called that.

Directions
- Cut the meat into thin slices, following the grain. ≈ 8 min
- Place the meat in a bowl, add the hoisin sauce, mix thoroughly, then sprinkle with cornstarch and mix again until the meat is evenly coated. ≈ 4 min
- Mix the spices together and set aside. ≈ 4 min
- Heat the peanut oil in a pan and sear the meat over medium heat, constantly stirring with two forks to separate the slices.
- Remove the meat when it is well browned and cooked through. ≈ 3 min
- Add the spices to the wok, bring to a boil, and then add the sesame oil.
- Add the lamb and stir quickly over high heat until it is well coated in the sauce. ≈ 4 min
- Serve immediately. ≈ 2 min
