Directions
- In a bowl, whisk together the egg whites, about 50 ml of sugar, and vinegar/lemon juice. ≈ 4 min

- The whites should be beaten until they reach a firm consistency, to the point that you can flip the bowl upside down without the whites collapsing. ≈ 3 min
- Add the remaining sugar gradually. ≈ 3 min
- In a bowl, whisk together the egg whites, sugar, and vinegar/lemon juice. ≈ 4 min
- Place the bowl in a water bath inside the oven.
- Continue mixing until you achieve a firm, smooth, and glossy consistency. ≈ 4 min
