‘Heringsstipp’ is a delicious fish dish made with matjes herring, very popular in the Bergisches Land region and along the Rhine. It is usually served with rye bread, boiled potatoes or fried potatoes.

Directions
- Mix the crème fraîche, mayonnaise and mustard to make the sauce. ≈ 4 min
- Cut the herring fillets into bite-size pieces (about 2x2 cm). ≈ 8 min
- Cut the pickles and onions into small dice (about 0.5 cm on each side). ≈ 8 min
- Peel and core the apples, then cut them into quarters. ≈ 8 min
- Then cut the quarters into slices. ≈ 8 min
- Add all the ingredients to the crème fraîche sauce. ≈ 3 min
- Season with sugar, salt and lemon juice. ≈ 2 min
- Let rest for 2 to 4 hours before serving.
