Kuku is a thick omelette, very popular in Azerbaijan and Iran. It is filled with a delicious mix of fresh herbs: green onion, cilantro, dill, spinach, mint, and sorrel. It is cooked covered, then flipped in quarters. Serve it with yogurt or cream.

Directions
- Wash the herbs and chop them finely. ≈ 8 min
- Whisk the eggs in a bowl. ≈ 4 min
- Add the herbs, salt, and pepper, then mix again. ≈ 4 min
- Place the butter in a warm pan.
- Once the butter is melted, pour in the egg mixture. ≈ 3 min
- Securely cover the pan.
- After 10 minutes, divide the kuku into 4 pieces and carefully return them to their original positions.
- Cook for another 10 minutes.
- Serve with yogurt or cream. ≈ 2 min
