Thin, crescent-shaped pancakes filled with fresh herbs, spinach, cheese, and caramelized onions, then pan-fried. A classic dish from Azerbaijan.
Qutab is a thin, crescent-shaped Azerbaijani pancake filled with a mixture of fresh herbs, spinach, and cheese. It is pan-fried on both sides until golden brown. Serve it hot, with yogurt.

Directions
- Wash the herbs and chop them. ≈ 8 min
- Add crumbled cheese or dry cottage cheese, salt, and pepper to taste, then mix well. ≈ 4 min
- Add the golden onion to the oil paint. ≈ 3 min
- Sift the flour. ≈ 2 min
- Add the water and salt, then knead into a firm dough. ≈ 10 min
- Divide the dough into balls and flatten each into a thin disc. ≈ 10 min
- Place the filling on one half of the pancake. ≈ 3 min
- Fold the other half over and shape it into a crescent. ≈ 10 min
- Have both sides of the pan be gilded.
