Directions
- To make the syrup: combine the water and sugar, heat until dissolved and simmer for a few minutes, then add the saffron. Turn off the heat as soon as the syrup coats the back of a spoon, and let it cool.
- Pour commencer, pour le halva, pour the flour in a deep frying pan over low heat and stir constantly until it changes color. Keep a close eye on it, as it burns quickly. The darker the flour becomes, the more flavorful the halva will be.
- Remove from the heat and pass the flour through a sieve to remove any lumps. ≈ 3 min
- Return it to the heat, add the butter, and stir for 10 to 15 minutes, until it is fully incorporated.
- Pour the in. If the dough seems grainy, continue to stir: it will come together quickly. ≈ 4 min
- Add the rose water and cardamom, mix well, and then remove from the heat. ≈ 8 min
