Guarapita is a Venezuelan cocktail made with passion fruit juice (parchita), sugar, mint, and three types of alcohol: white rum, gin, and aguardiente. It is served very cold, with plenty of ice.

Directions
- Wash the passion fruit and cut them in half. Scoop out the pulp and mix it with a cup of water, then strain and set aside the juice. ≈ 8 min
- Remove and discard the white membrane inside the peels, then boil them for about 15 minutes in water that covers them, until they are tender. Let cool and blend with the cooking water to create a thick juice. Strain.
- In a bowl, combine the passion fruit concentrate and sugar, then gradually add the juice from the peels until you reach the desired consistency (you may not need all of it). Add the alcohols to your liking, along with the mint and ají, and add more sugar if needed. ≈ 4 min
- Pour conserver, pour each bottle and store in the refrigerator. Serve with plenty of ice.
